Jen, I watched a bunch of Gordon's videos over at http://www.dslrtips.com. I also spent a lot of time reading my manual and I am looking at the websites of professional photographers to develop a better eye for composition. Sometimes I use the photo editor at http://www.picnik.com, too.
We should get together and "shoot" some stuff sometime while our husbands go for a ride! :) What methods have you used to learn?
